From scallops hand-picked in clear local waters to the sweetest Jersey Royal potatoes, plucked from the ground that very day, we are proud to use the finest Jersey produce.
We take enormous pride in using as much locally produced food as possible. Not only does this help promote the sustainability of the local environment and food producers, but it means that a visit to Jersey is only complete if it involves taking the time to enjoy the local food.
Our Head Chef, Lukasz Pietrasz, strongly believes that such a wealth of locally grown produce should be reflected in the menus that he creates. For anyone dining at Greenhills, it's the taste of Jersey that makes our food so special.
We're proud to buy our fish from Fin & Feather, one of the island's leading fresh fish and seafood suppliers. At the helm of this small family business are Graham and Anthony, who collectively have over 60 years hands-on experience.
All of our scallops are hand-caught locally by divers, which ensures a less disturbed and healthier seabed, with minimum impact on the marine environment. Their sustainable fishing methods will provide abundant scallop stocks for years to come.
Our potatoes are grown by the Rabet family, who have been farming on Jersey since the 12th century. Brothers Alan and Philip continue the family legacy, still using the original seed. Unlike conventional varieties, these potatoes don’t crop as much, which is the secret to their distinctive flavour.
The Rabet family takes pride in the soil their variety is grown in, fertilizing it with seaweed harvested from the beach at St Ouen’s Bay, which adds a subtle saltiness to the potatoes.
Our meat, cheese, and gelato come from Blanc Pignon Dairy Farm, Jersey's only independent dairy producer. Founded in 1942, Blanc Pignon Dairy Farm adopts the highest standards of ethics to produce meat and dairy as sustainably and in harmony with nature as possible.
We source the finest Jersey fruit and vegetables from Homefields, one of Jersey's largest wholesalers of fresh produce, supporting local farmers wherever we can to keep the island's rich farming heritage alive and thriving.
The Liberation Brewery, in one form or another, has been a traditional ingredient of Channel Island life for well over a century and its award winning Liberation Ale brims over with genuine local flavour.
Royal Gin is made by La Mare Vineyards, an artisanal gin crafted in Jersey using seven classic botanicals, balanced with the unique influence of the Jersey Royal Potato. Best enjoyed over a sprig of fresh mint, it's a must try!
